Meet Kaz

Kazimierz Stafin (Kaz to everyone) has been a chef for 34 years in which time he has travelled around the world picking up influences along the way. He has a true love of food and after working in numerous quality establishments such as the Raddison SAS, Fillini, he is helping us build our strong reputation for exceptional food.

 

When did you know you wanted to be a chef?

1978 – As a child I loved to cook with my mother, and at 15 it was decision time and she said do you want to work in the hot or the cold, and I chose hot.

What do you love most about your job at the brasserie?

It’s a family run restaurant and I love that. We only use the freshest produce all of the time and that is so important to me – there is no microwave here! – I have control of the produce from market to the table. I am very happy here – the comments from customers are fantastic and for me that’s what it’s all about.

What’s your favourite dish on the a la carte menu?

Anything with fish, I love seafood, and the lamb this is beautiful too.

What do you see as the hardest dish to cook?

Homemade pasta – that may surprise you, but it’s difficult to prepare, keep and cook to perfection! Steaks also – getting them just right!

What do you do to stay educated about new trends?

I have two sons, both chefs, one works at 59 Street in Chelmsford and the other is a sous chef at 5 Hertford St in Mayfair – I am very proud of them, and they keep me updated about everything! but I always like to give every dish my own special twist though that’s important to me.

Name 3 people you would most like to cook for at the brasserie?

Gordon Ramsey, David Beckham, and my mum – but I love cooking for anyone.

Do you do the cooking at home?

No, usually my wife cooks! – If it’s a special occasion I will – I have a huge grill at home and I love cooking meat.

If you had to cook a nice meal in 30 minutes, what would you cook?

So many things – Its Autumn so venison steak with mashed potato piccolo parsnips & braised cabbage, but I love duck breast, all seafood and paella – maybe we will cook a paella for ladies night one night.
